It’s also a (not particularly woke) term in cryptocurrency trading. In Korean markets, virtual currencies (especially Bitcoin) often have higher prices than in other markets. That higher price level is known as the "kimchi premium" (kimchi being a well-known staple of Korean food).
South Korea has a relatively large market for cryptocurrencies compared to the rest of the world. This fact leads to higher demand in the country for virtual currencies compared to other world markets. The added demand leads to higher prices.
